Sourcing and Processing

Pulping Washed Coffee at Dos Ruedas in Panama

This coffee comes directly from the Batista family's small farm Dos Ruedas in Boquete, Panama. The farm is sustainably run by Alexis Batista with a focus on safe practices and meticulous attention to detail. Alexis is also passionate about new and experimental processing. His goal is to produce unique quality coffee that exemplifies the beautiful terroir of the land.

The Coffee Drying Process at Dos Ruedas in Panama

Only perfectly ripe cherries are selected. They are carefully harvested by hand with attention given to not disturbing the ones that are still maturing. The picked cherries are hulled at the local mill and checked with a color grader.

This "not normal" washed coffee goes through two stages of fermentation. First, the whole cherries are placed in grain barrels to rest and begin to ferment. They are taken out to be pulped (their skin and flesh removed), then returned to the tanks for the second stage of fermentation. Finally, the coffee is moved to shaded raised beds to dry. The drying process takes around 10 days and is very labor intensive. The coffee must be constantly monitored to prevent mold until it reaches the ideal moisture level. You can taste the unique flavors of the land in this truly amazing cup.
