is a family farm with a rich history and strong commitment to quality.
Founded by my grandfather in 1975, the farm was a legacy that marked the beginning of a coffee-growing tradition. However, after his passing, the farm suspended its operations for several years.
In 2018, my father, a passionate coffee enthusiast, took over the estate after it had been abandoned, and together with me, Ing. Álvaro Zamora Padilla, we decided to revitalize it.
We divided the estate into plots and areas by elevation, which allowed us to cultivate resilient and productive varieties such as Sarchimor, Anacafé 14, and Paraneima.
At Finca Las Ilusiones, post-harvest processes are critical to ensuring the exceptional quality of each cup of coffee.
The careful selection of the ripest and most perfect beans marks the beginning of a rigorous process designed to preserve and enhance the unique characteristics of each variety
At Finca Las Ilusiones, every process reflects our dedication to excellence and our passion for producing world-class coffee.
These methods not only guarantee exceptional coffee, but also support sustainable agricultural practices, respecting our natural environment and valuing artisanal work at every stage of production.
Whole fruits are dried in the sun without removing the pulp or mucilage. This method enhances intense, sweet and fruity flavors, with a pronounced body.
The Porvenir Cooperative consists of 28 farms owned and run by 9 families. They are known for their high quality coffees and interesting processing techniques. This coffee is part of their Ayarza Wine Series, a collection of deeply fruited, markedly winey coffees, all processed in different ways. The coffees all display intense fruits, a slightly fermented character reminiscent of wine, candied sweetness, and depth of body, each through their unique lens.
This coffee was shade grown under broadleaf and conifer trees. The cherries were carefully hand picked when perfectly ripe and delivered to the cooperative's processing station to be sorted. Only the highest quality ripe cherries are selected. For the natural process, the cherries are immediately spread out on patios and dried for 5-6 days before being finished in drum-type mechanical coffee dryer call a Guardióla. The cup is sweet with notes of raspberry, caramel, and sweet grain.
