Sourcing & Processing

Yirgacheffe is one of 8 districts in the Gedeo zone of southern Ethiopia where coffee, both wild and cultivated, thrives. This high elevation area is thick with lush vegetation, rich with healthy soil, and warm with a tropical climate. When grown at such high altitudes, over 2,000 masl, coffee cherries take longer to ripen, giving them more time to absorb the flavors of the land.

Hirut Shallo grows organic coffee on her 5.2 hectares of land in Yirgacheffe together with her husband and 4 children. Her farm is considered very large for this area, where half a hectare is the norm. Single-farm coffees are rare in Ethiopia and allow for greater control and traceability. This micro lot is also unique in that it is not just landrace varietals but also specific lab-created and hybrid varietals.

This coffee was carefully hand-picked with the help of 7 additional harvest workers and sorted for consistency and quality. It was then moved to raised beds on the farm to slowly sundry for approximately three weeks. The beans are dense with less skin discoloration than other natural coffees.
