This coffee comes from the women owned and run Dumerso washing station in Yirgacheffe, Ethiopia. For this process only the highest density cherries are selected and placed in a controlled environment with limited oxygen infiltration. This results in an extremely complex, delicate, and nuanced cup; very smooth and balanced with a medium body.

Chemex

Form meets function in the classically beautiful Chemex brewer. Grind size is critical when brewing with this method since the brew bed can get large. Use a coarser grind to experience bright and floral fruit notes.

Sourcing & Processing

Over 700 small family farms contribute coffee to the Dumerso washing station in Ethiopia's Yirgacheffe region. Led by the sister team Hirut and Mahder Birhanu, this complex operation provides employment for nearly 400 people in the local community, including many women.

For this process only the highest density cherries are selected and placed in a controlled environment with limited oxygen infiltration. This allows for naturally occurring and non-manipulated yeast fermentation. After a number of days, the coffee is moved to open air shaded tables to sun dry. This process boosts sweetness and brings out the coffee's intrinsic fruit flavors.
