Our Colombia Microlot series continues with this delicious Pink Bourbon from the Las Brisas farm in Huilia. Grown in the highlands of the Andes Mountains, among plantain and yuca trees, this coffee's cup is lively and refreshing with a notable body and mouthfeel. We taste Sungold tomato, sweet corn, and key lime with a ripe pineapple acidity.

This special varietal coffee comes to us from the Huila region of southwestern Colombia. Huila is nestled in between the Central and Eastern ranges of the Andes and is known for it's incredibly varied geography, stunning views, diverse microclimates, and award winning specialty coffees. While Huila accounts for nearly 20% of the country's production, 80% of its coffee producers operate on less than three hectares.

Yeison Tovar Diaz owns and operates Las Brisas, a 5-hectare family farm located in Suaza, Vereda El Cavildo, Huila, Colombia. Established in 2014, the farm is nestled in the Andes mountains, situated at an altitude of 1,860 masl. Las Brisas supports approximately 7,500 coffee trees alongside other crops like plantain and yuca. Yeison acquired the farm through hard work and persistence, managing to buy the farm by gradually paying in installments. "Las Brisas" refers to the refreshing breezes that flow through the area.

Mr. Diaz began cultivating the Pink Bourbon varietal after hearing about its high yield and top quality from his neighbors. Over the years, he has perfected the growing of this sought-after coffee, allowing him to improve and expand the farm’s infrastructure. The harvest at Las Brisas supports two permanent employees and four seasonal workers. The cherries are carefully harvested when ripe, sorted, washed, and dried in a mechanical dryer.

Pink Bourbon is a high-altitude Colombian coffee varietal known for its distinct pink cherries, high sugar content, and complex, floral-fruity flavor profile. It is often compared to the Gesha varietal and is quickly growing in popularity. Cultivated from the hybridization of Red and Yellow Bourbon, Pink Bourbon is still a relatively rare varietal and is difficult to produce with consistency. This lot was carefully isolated and contained to preserve its unique color and character.
