Inmaculada Coffee Farm in Pichindé, Colombia

Nestled in the heart of the Andes mountains, world champion coffee farm La Inmaculada is located in Pichindé, Colombia. This high elevation town is surrounded by the lush beauty and biodiversity of the Farallones de Cali Natural Park. The rivers that flow down through the park create a region of unparalleled natural abundance and fertility.

La Inmaculada is well known for its careful production of rare varietals, precise processing methods, and strict quality control protocols. The farm was established by the Holguín-Ramos family in 2010 with two main goals in addition to specialty coffee production; to give back to their local community and to preserve and protect the land.

In addition to growing coffee on their own farm, the Holguín-Ramos family also buys coffee cherries from select local farmers to process at Inmaculada. In 2022, the family created the Fellow's Farms Program to help their neighboring small farms face the challenges of unpredictable market prices and climate change. The program helps farmers improve their production and harvesting practices.

Inmaculada is a natural biodynamic agricultural farm. No synthetic fertilization or agrochemicals are used in any of the cherries they process and strict growing conditions are maintained. Only certain parts of the farm's land is cultivated. Vast areas of natural forest are maintained and protected.

Inmaculada Coffee Farm in Pichindé, Colombia

Inmaculada and their partner farms are planted exclusively with unique and exotic varietals. In addition to Pink Bourbon, they also grow Gesha, Laurina, Sudan Rume, and Eugeniodes.

This natural anaerobic coffee is fully traceable from farm to cup. Perfectly ripe cherries are harvested, sorted, and put in sealed containers with their skin and mucilage in-tact. They are allowed to ferment in this low oxygen environment. After a set number of hours, the cherries are moved and spread out on raised beds to dry for 22 days.
