Process

Swallowtail's Yabukita Matcha is shade-grown to encourage enhanced chlorophyll production. Once harvested and dried, the leaves are stone-ground into a fine powder about 5 microns small, smaller than talcum or baby powder. Matcha is revered for its health qualities because, while most teas are steeped and separated, matcha is wholly consumed. It's like the difference between boiling spinach and just drinking the water and eating the greens along with the broth. Try it in a traditional Chawan for a wonderful experience.
